My research interest has mainly been isolation and purification of bioactive molecules & development of functional ingredients from plant & marine biomass with special focus on valorisation of by-products. I have previously worked on bioprocessing of juice industry waste and marine by-products to yield high value functional products. Novel food processing techniques for optimized extraction of bioactive molecules such functional lipids, proteins and peptides has been my pursuit.
At present I work on hydrolyzing proteins using enzymes to manufacturing bioactive peptides rich hydrolysates for targeting metabolic disorders.
