The main research topics of Dr. Goksen is:
i) Biological macromolecule extraction such as protein, polysaccharides, phenolic substitutes from green, red and brown seaweeds, seafood by-products etc using novel technology (non-thermal processing)
ii) Development of micro-and nanoencapsulation systems for the protection of bioactive ingredients;
iii) Development of active and biodegradable packaging materials with improved properties and reduced environmental impact and characterization of these materials;
iv) Development of materials with antimicrobial activity for improved food safety.
v) in vitro digestion and bioavailability
vi) Food applications with improved nutritional quality and functionality.
