The main research topics of Dr. Goksen is:
i) Development of micro-and nanoencapsulation systems for the protection of bioactive ingredients;
ii) Extraction of the bioactive compounds/dietary fibre, their bakery products applications, and improving nutritional quality and functionality;
iii) Evaluation of food by-product in food applications
iv) Development of packaging materials with improved properties and reduced environmental impact and characterization of these materials;
v) Development of materials with antimicrobial activity for improved food safety.
vi) Biocompounds extraction such as protein, polysaccharides, phenolic substitutes from seaweeds, seafoods etc using novel technology
vii) in vitro digestion and bioavailabilty
